When Comfort Becomes Medicine
Healing does not mean deprivation. True healing is learning how to nourish the body without harming it. This Healing Spiced Carrot Cake (Gentle Version) was created to comfort the body, calm the nervous system, and support digestion without gluten or dairy.
Carrots provide fiber and antioxidants that support gut and immune health. Pineapple contains natural enzymes that aid digestion and reduce inflammation. Warming spices like cinnamon, nutmeg, ginger, and cloves increase circulation and bring grounding warmth to the body, especially during times of stress or fatigue.
This cake is meant to be enjoyed slowly. Sit down. Breathe. Let your body receive nourishment without guilt.
Ingredients
Healing Cake (Gluten-Free / Dairy-Free)
¾ cup coconut oil or avocado oil, melted and cooled
1½ cups coconut sugar or maple sugar
5 large eggs, room temperature
(or 5 flax eggs if egg-free: 5 tbsp ground flax + 12 tbsp water)
2 cups almond flour
1 cup gluten-free oat flour
½ tsp baking powder
½ tsp baking soda
½ tsp sea salt
1½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp ground cloves
1 cup freshly grated carrots
½ cup crushed pineapple, well drained
½ cup almond milk or coconut milk, room temperature
1 tsp vanilla extract
½ cup chopped walnuts or pecans (optional)
Dairy-Free Cashew Glaze
¾ cup raw cashews, soaked 2–4 hours
2–3 tbsp maple syrup (to taste)
1 tsp vanilla extract
2–4 tbsp almond milk, as needed
Blend until smooth, creamy, and pourable.
Instructions
1. Prepare the Space
Preheat oven to 350°F (175°C).
Grease and line a 9×13-inch pan or two 9-inch round pans with parchment paper.
Take a moment to breathe. Healing begins with intention.
2. Mix the Wet Ingredients
In a large bowl, whisk together the melted coconut oil (or avocado oil) and coconut sugar until smooth.
Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
3. Combine the Dry Ingredients
In a separate bowl, whisk together almond flour, oat flour, baking powder, baking soda, salt, and all spices until evenly blended.
4. Create the Batter
Gradually add the dry ingredients to the wet mixture, alternating with almond milk. Mix gently until just combined do not overmix.
5. Fold in the Healing Ingredients
Gently fold in grated carrots, crushed pineapple, and nuts (if using). The batter will be thick and fragrant.
6. Bake
Pour batter into prepared pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool
Allow the cake to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before glazing.
Dairy-Free Cashew Glaze Instructions
Drain soaked cashews and place them in a blender.
Add maple syrup, vanilla, and almond milk.
Blend until silky smooth. Add more almond milk if needed for a drizzle consistency.
Drizzle over the cooled cake.
Serving & Storage
Enjoy slightly warm or at room temperature
Store covered in the refrigerator for up to 5 days
Freezes well (unglazed) for up to 2 months
