At Gen Spa, we believe healing happens when the body is supported—not overstimulated. This low-sodium version of traditional collard greens honors cultural roots while caring for the heart, circulation, and digestive system. Instead of relying on heavy salt, flavor is developed through slow cooking, natural aromatics, and balance.
This dish is grounding, comforting, and deeply nourishing—perfect for restoring the body during times of stress, fatigue, or recovery.
Ingredients (Gen Spa Low-Sodium Version)
1–2 ham hocks (use 1 for lighter sodium)
2 lbs collard greens, stems removed and leaves chopped
4 cups low-sodium chicken broth or homemade broth
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
½ teaspoon crushed red pepper flakes (optional)
½ teaspoon coconut sugar or raw honey (optional, for balance)
Freshly ground black pepper, to taste
1 tablespoon olive oil (optional)
Gen Spa Tip:
If you are sensitive to sodium, soak the ham hock(s) in water for 1 hour before cooking and discard the water. This gently reduces excess salt while preserving flavor.
Instructions (Cook with Intention)
1. Prepare the Slow Cooker
Place the ham hock(s) at the bottom of the slow cooker. Scatter the chopped onion and garlic around them. Drizzle lightly with olive oil if using.
2. Add the Collard Greens
Layer the collard greens on top. If needed, add them in stages, gently pressing them down as they begin to soften.
3. Build Healing Flavor
Pour in the low-sodium broth. Add apple cider vinegar, smoked paprika, red pepper flakes, and sweetener if using. Season with black pepper. Avoid adding salt at this stage.
4. Slow Cook
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the greens are tender and the ham is soft and flavorful.
5. Finish Mindfully
Remove the ham hock, shred the meat, and return it to the pot. Taste and add minimal salt only if truly needed.
